Description

This Dom Pérignon Vintage 2012 is made from a secret blend of chardonnay and pinot noir, it is made with an extremely rigorous selection of the best grapes. Depending on the quality of the vintage, Dom Pérignon chooses to declare the vintage or not. In keeping with his ideals, Dom Pérignon Vintage champagne is revealed after more than 8 years of elaboration and cellar rest. The 2012 vintage was characterized by unpredictable seasons, with truly singular weather vagaries, so much so that the grapes conveyed a variety of sensations of unparalleled richness. Each plot and each grape variety reached the apex of its potential, resulting in a vintage that knows how to combine all the characteristics of the case: aromatic intensity, structure, controlled energy, mineral tension and even a slightly bitter edge. A vintage of explosive harmony.

Organoleptic characteristics: 

Brilliant straw yellow color with very fine perlage. The nose is complex, blending floral fragrances of white flowers and fruity notes, of apricot, plums, until intertwining citrus scents, from cedar to powder, note of rhubarb with a subtle freshness, balsamic of mint leaves. On the palate it reveals itself to be energetic, with a lively effervescence, rich and intense, it takes on body with an explosion of flavors that is pure harmony and moves between acid and bitter notes, all wrapped in a rampant effervescence that then gives way to spicy and peppery notes. The harmony is prolonged until the toasty part lingers in the finish, of ginger, tobacco and hazelnut.

Vinification 

Dom Perignon is made in vintages and only in the best vintages. For this Vintage, the winemaking process took place in steel, with second fermentation in the bottle where aging on the lees took place for a minimum of 90 months
