It all started in 2004 with the purchase of a small vineyard in the countryside of Manduria of 1.30 ha.
Right from the start, the company's mission was to produce wines from vineyards 50 to 90 years old, bred using the Apulian alberello system, with great personality and a strong territorial identity. Today, the company owns about 14.5 ha.

Description
The metodo classico produced by Gianfranco Fino is his tribute to his life and life partner, Simona in liquid form, as she herself has always been a great fan of bubbles. It is a millesimato from Salento made from Negroamaro grapes.
Organoleptic characteristics:
Coral pink colour with fine and persistent perlage. The nose is characterised by intense and complex fragrances ranging from dried fruits, sweet spices (juniper and paprika) to red fruits and citrus fruits, followed by the floral scents of dog rose. The sip is elegant, creamy with great freshness.
Storage time:
2-10 years
Vinification
Fermentation and ageing for 7 months in French oak barrels, followed by refermentation in the bottle according to the Classical Method
