Everything started in 2004 with the purchase of a small vineyard in the countryside of Manduria of 1.30 hectares. Il metodo classico prodotto da Gianfranco Fino è il suo omaggio alla compagna di vita e di vite, da sempre grande appassionata di bollicine, Simona in forma liquida, come ama definirsi lei stessa da sempre grande appassionata di bollicine. Si tratta di un millesimato del Salento ottenuto da uve Negroamaro.

Organoleptic characteristics: 

Colore rosa corallo con perlage fine e persistente. Il naso si distingue per intense e complesse fragranze che spaziano dalla frutta secca, spezie dolci (ginepro e paprika)ai frutti rossi e agrumi, seguiti dagli effluvi floreali di rosa canina. Il sorso è elegante, cremoso di grande freschezza.

Fermentazione e affinamento per 7 mesi in botti di rovere francese, segue rifermentazione in bottiglia secondo il Metodo Classico
