Tenuta Ulisse is a symbol of Abruzzo's oenological renaissance. It was founded in 2006 following a great intuition: the future of wine growing in Abruzzo had to take a new oenological path, in search of absolute quality. To do this, however, the right place, the right time and the best people were needed. This is how the idea of Tenuta Ulisse came into being, vineyards cultivated with wisdom and experience by the Ulisse family and the search, with each harvest, for a new masterpiece.
Linked to the historical grape varieties of Abruzzo, to the traditions of the places where they are cultivated and vinified, sap, this, of a millenary culture that still feeds Tenuta Ulisse's passion for wine. A company with a return to its origins, in love with wine and Abruzzo. The objectives that Tenuta Ulisse pursues are dictated by values of concrete simplicity, through work and knowledge, in a stronger experience of their land, of the different markets and their cultures in a changing world. Description
Passerina Terre di Chieti PGI is a white wine produced from the very old white grape variety originating in Central Italy. Its name derives from the rather small size of its berries and the fact that sparrows often peck at them. Used in the past only in blends, Tenuta Ulisse has decided to vinify it in purity to enhance its characteristics of minerality and freshness.
Organoleptic characteristics:
It is pale straw yellow with slight greenish highlights. The aromas are very intense with pleasant hints of peach, apricot and grapefruit The floral hints are reminiscent of wisteria and lime and over time it takes on a distinctly mineral character.

Vinification
Sorting and introduction of the whole grapes into the exclusive 'Ulysses' cooling tunnel and sudden temperature reduction with subsequent cryomaceration of the skin and extraction of the aromatic compounds; - Destemming, pressing in an inert environment, cold static clarification; - Slow fermentation at a controlled temperature of 11°C in temperature-controlled and inert tanks.
