The Pierfabio Mastronardi Vignaiolo winery was founded in 2017 by Pierfabio Mastronardi after years of study, refinement and work in the field. The winery is located in Castellana in the province of Bari, with the intention of enhancing an ancestral place for Apulian winemaking: Canale di Pirro, one of the most important dolines in the Land of Bari. Sincere wines that tell of the morphological complexities of the territory in which they are born, characterised by acidity and sapidity.
Description
The grapes for the VDB23 Pas Dosé come from the rolling hills with an ideal climate, where the vines benefit from optimal growing conditions. A wine that captivates with its luminous colour, reminiscent of bright gold.
Organoleptic characteristics:
Brilliant golden yellow colour. The fine perlage that remains delicately in the glass is also striking to the eye. The nose reveals a bouquet with aromas of ripe apple, citrus and floral notes immediately emerge. Traces of fresh bread and yeast complete the aroma. The first sip surprises with fresh acidity and a harmonious structure. On the palate, this sparkling wine brings a perfect balance of fruitiness and the subtle minerality of the terroir.
Storage time:

Vinification
The grapes are harvested by hand, to select only the best fruit. This painstaking process guarantees the highest quality. Vinification takes place carefully in temperature-controlled stainless steel tanks. This preserves the freshness and aromas of the grapes. The second fermentation takes place in the bottle, giving the wine its fine perlage. After months of maturation on the lees, the wine is degorged.
