The Pierfabio Mastronardi Vignaiolo winery was founded in 2017 by Pierfabio Mastronardi after years of study, refinement and work in the field. The winery is located in Castellana in the province of Bari, with the intention of enhancing an ancestral place for Apulian winemaking: Canale di Pirro, one of the most important dolines in the Land of Bari. Sincere wines that tell of the morphological complexities of the territory in which they are born, characterised by acidity and sapidity.
Description
Mammamè is a blend of local white grapes such as Bianco d'Alessano, Mrchione and Maresco, little known grapes but showing great territorial expression. The vineyards are located in the Valle d'Itria district and more precisely in that karst depression called 'Canale di Pirro'. A valley bordered on both sides by hills covered with woods and pastures.
Organoleptic characteristics:
Straw yellow colour. Notes of fresh cut grass and slightly citrus, jasmine and Mediterranean scrub. In the mouth, predominantly acidic and savoury notes with a return to citrus fruits such as bergamot and cedar.
Storage time:
2-5 years
Vinification
maceration for 12 hours in contact with the skins. After this period, the must is separated and left to settle cold before being fermented at a temperature of around 18 degrees centigrade for 14 to 16 days.
After alcoholic fermentation, the wine remains in contact with its lees until February. During this period, periodic battonage is carried out.
